Caramelized Onions 101…properly caramelized onions take time (40-45 min) but they are WELL worth it…

I like adding a pinch of brown sugar, not needed but I love the depth it adds to the caramelization. You can deglaze with any liquid, my preferred is the combination of tamari and balsamic vinegar because of the pop of acid and umami. You can use wine, stock or water. 

Do NOT overcrowd pan. I used 2 onions for 12 inch pan.

Ingredients:
 • 2 yellow onions (thinly sliced but not paper thin).
 • 1 tsp salt (plus more to taste).
 • 1 tsp brown sugar.
 • 1 tbsp olive oil.
 • 1 tbsp tamari.

•1 tbsp balsamic vin.

Directions:
 • 1. Preheat pan on medium heat for 2 min, add the olive oil. Lower heat to low.
 • 2. Add in onions and sautee every 2-3 min for 20 min.
