It seems that the practice of assisting first is becoming more rare nowadays. It also allows one to see certain processes in action that may be important but not exactly highlighted in YT or IG videos. There's only so much that can be shown behind a camera with the time constraints involved in making educational AND ENTERTAINING videos. In my experience, I have felt resentful when I undercharged for a job and felt like I was giving more than what I was being compensated for.
