Emile Henry unveils Modern Classics, an American inspiration and the first significant launch of an Emile Henry collection since the original pie and lasagna dishes debuted in the early '90s. Modern Classics is a range of cookware and bakeware that has been on the drawing boards for many, many months. It is truly an American collection as the shapes, capacities, and dimensions were developed with an eye toward American foods, style and recipes. All of the shapes have been designed from the ground up to attract the American consumer while preserving the intangible design elements and the performance properties of Emile Henry. In any case, it's my favorite baking dish, and if it gets broken I will probably buy another one. If you have careless people in your kitchen, you probably should make it off limits to them and put it somewhere where they can't touch it or throw things on top of it in the cabinet. Don't leave it dirty in the sink either, because someone is bound to throw something on top of it.
This pan holds twice as much as the old Pyrex and is really deep, no more overflows. Measurements are in inches... Internally it is 13.5 x 9.75 at the top and 12.5 x 8.5 on the bottom and is 2.5 deep. Externally at the top it is 16.25 long with the handles, 10.25 wide and 3 deep. It holds 4.8 quarts.
I've had several pieces of Emile Henry for years and love them all dearly. They bake so evenly and clean up is so easy. Gee, I wonder what will get broken next.
